Making good nutrition and preventative healthcare taste greatCarritech’s ColdBake technology can deliver entirely new ranges of sweet and savoury baked foods capable of carrying heat sensitive ingredients that can provide health, nutrition and medicinal benefits.

In line with the ongoing roll-out of international patents for our technology, we’re very happy to announce that we’ve just been granted a patent for ColdBake in Japan.
Snacks packed with nutrients
Consumers don’t (or can’t) always make the most nutritious food choices and usually default to taste over nutritional value. So doesn’t it make sense to make snacks full of active nutrients? Imagine: nutrient filled foods that taste as great as your favourite biscuits or savoury snacks. Sounds like a great idea!
Unfortunately, there’s a problem with this idea: normal baking destroys many nutrients and bioactive ingredients, so incorporating them into popular foods like biscuits and snacks has been impractical – until now.
Patented ColdBake technology
A recognised challenge in the functional foods sector is the retention of heat sensitive nutritional ingredients during the process of manufacturing genuinely enjoyable snack foods. Conventional processes such as baking subject these ingredients to temperatures which are liable to damage or destroy them.
Carritech’s proprietary ColdBake process, however, enables crunchy foods and ‘intermediate ingredients’ to be produced at much lower temperatures than normal baking, thereby preserving the functional properties of temperature sensitive ingredients in a way that was just not possible before.

Proof of concept
Extensive independent testing has shown that ColdBake passes ‘bio-availability’ testing with flying colours – meaning that any added nutrients are available to be absorbed by the body when eaten as part of one of our snacks. We have developed concept prototypes including enhanced biscuits and breakfast cereals, sports nutrition snacks and nutrient-blend biscuits to combat under-nutrition.
Carritech’s ColdBake technology can be applied to transform the delivery of nutrients and medicines across a number of global markets. In making the technology available through licensing, Carritech is in a position to avail of the opportunities residing across all these multi-billion dollar markets.
LicensingCarritech’s patented technology is available for licensing across the food and pharmaceutical sectors to carefully selected partners. We anticipate that applications will include:
Carritech’s management team balances strong sectoral experience with high-calibre technical capability. Carritech works with its clients to co-develop applications. A licence to the ColdBake technology can then be granted and the technology transferred to the client with ongoing support from Carritech’s technical team.

Carritech was formed in Northern Ireland in April 2009 by by Dr. Richard Horton, an experienced process scientist with years of R&D and engineering expertise gained inside and outside the food industry. The Carritech management team has been assembled in order to balance sectoral experience with technical capability, commercial expertise and market awareness.
The challenge of applying Carritech’s unique technology across numerous applications through a co-development and licensing model will be met by a team of complementary talents drawn from across industry.
